This is a fun and delicious breakfast, loaded with nutrients, to make when you have a little extra time on your hands. Make sure to include the sage brown butter as a drizzle, it truly makes the dish!
Ingredients:
- Sweet potatoes, chopped
- Breakfast sausage, ground
- Apple, diced
- Sage, finely diced
- Butter
Directions:
- Dice sweet potatoes and coat with EVOO. Roast in oven (375) until crispy.
- Sauté breakfast sausage until just cooked.
- Add diced apples (sprinkled with cinnamon), and 1 tbsp maple syrup, to the sausage and cook until apples become tender.
- Make sage brown butter. Sautéed butter + diced sage until the butter starts to brown.
- Combine the sweet potatoes and sausage/ apple mixture, and drizzle with sage brown butter.
Top with peppery arugula, micro greens or an egg for added nutrients!
